Supper is supposed to be that magical time of family reunion and relaxation; a chance to unwind from the stresses of the day and chat with the kids about how their day went. Too bad it never turns out that way! Most suppers at our house are frantic ordeals, with kids yelling and screaming, fighting and arguing, and pushing each other out of the way to try and reach the table first.
But if supper’s peace and quiet is a lost cause, its nutrition doesn’t have to be. The author of a popular guide for people suffering from the symptoms of diverticulitis (Great Taste No Pain), Sherry Brescia, has a few ideas on how to make supper healthy, even if it can’t be peaceful.

Fried ice cream is a dessert which has a warm crispy shell around the cold ice cream. Coconut fried ice cream is one of the famous type of fried ice creams. It is simple and can be made at home easily. The ingredients required in order to make this are 2 pints of vanilla ice cream, 1/2 tea spoon vanilla extract, 4 cups of coconut cookie crumbs, 2 large eggs, 1/2 cup of flaked coconut and vegetable oil.
Once you have all the required ingredients, you can start making the ice cream. You first need to place 8 scoops of the ice cream on a baking sheet and freeze it for at least 1 hour until its firm. Combine eggs and vanilla, then divide this mixture into half. Cover the one half of egg mixture and chill. Then combine the cookie crumbs and coconut, and divide this mixture as well into half.
Dip each ice cream ball into half of the egg mixture first, and then into half of the crumb mixture. Place the balls on baking sheet and freeze them from one hour. After one hour, remove them from freezer and dip them in the chilled egg mixture and then in the crumb mixture. Place them again on the baking sheet and freeze them till they are firm. This may take several hours. Pour oil in oven to a depth of around 3 inches and heat it to 375 degrees. Fry the ice creams balls in it for 30 seconds till they are golden brown. Drain them on paper tissues and serve them immediately.

Select fruits and vegetables that are fresh, uniformly ripe/matured and free from blemishes. They should be frozen as soon as they are harvested to prevent further growth of microorganisms. Spoilage starts and proceeds rapidly at room temperature. Fruits and vegetables are naturally cool early in the morning. Handling them at this time would be best. Vegan recipes prefer having them fresh but preserving them can help us to have them at their best even for a long time.
Fruits
- Sorting. Sort out fruits. Use only firm, fully and uniformly ripe and free of blemishes.
- Washing. Wash fruits in a diluted detergent solution using ½ teaspoon detergent every part of water. Arrange them in a colander and set aside to drain completely.
- Peeling. Peel off skin; remove seeds or core of fruits gently. Slice or cut up fruits into desired sizes and shapes.
- Pretreatment. Some fruits change in color when they come in contact with air. This discoloration could be avoided by pretreating them before packing.
a. Prepare a syrup using 1 cup sugar, 1 cup water with 100 milligrams table of ascorbic acid . place a slices of fruits into container and cover with the prepared syrup.
b. Using the same syrup preparation in (a), slice the fruit directly into syrup. Use the same syrup for packing.
c. Prepare a dipping solution using ¼ tsp. Citric acid to 4 cups of water. Dip fruit slices and allow them to stand for 1 minute.
5. Packing. Pack fruits as directed.
a. Sugar pack- mix fruits with sugar using 4 parts fruits to 1 part sugar by volume. Allow the sugar to dissolve in the juice drained from the fruit. Pack properly in prepared containers.
b. Syrup pack- pack fruits in prepared container then cover with prepare syrup. Leave ½ inch head space to allow expansion of the fruit during freezing.
Vegetables
Most vegetables will give high quality frozen products when they are frozen immediately after harvesting. If you are not going to use all of them, it is better to leave just what you needed and freeze the rest. In vegan cooking, fresh is the best but if you are too busy to buy them one at a time, freezing them is better. The following are the steps for freezing vegetables:
- Choose only fresh, young and tender vegetables. Fresh beans snap when they are broken.
- Washing. Wash carefully chosen vegetables in running tap water. Drain in a colander.
- Trimming and cutting. Trim off edges. Cut into uniform-sized pieces that will fit conveniently in the package or container. This will save pill and ensure good results.
- Blanching. Blanch all vegetables to destroy enzymes and other microorganisms and to retain good flavor and quality during freezing. Blanching could be done using boiling water or steam. Blanching by boiling is more practical for home use.
